Experimental of the effects of static magnetic field on carp frozen process

Abstract:

Carp frozen process in static magnetic field was experimentally investigated. The test samples were between 600~800g and the maximum thicknesses were between 46~52mm. All frozen processes were performed in an airblast quickfreezer, where the temperature was set -35℃. Magnetic field intensity was respectively 0G/3.6G/7.2G/10.8G. The surface and thermal centre temperatures were measured and recorded continuously in the whole frozen processes. The results indicated that the rule magnetic influencing frozen rate varied at different frozen stages. Magnetic field had little influence on cooling period, while, it held obvious promotion at phase change stage and delayed the freezing period.
