Abstract: A continuous ohmic heating system with vertical compartments for liquor was designed. The tap water ((40±0.3) kg/h and (50±0.3) kg/h the mass flow rate) and the soybean milk (6.01% the solids content, (75±0.5) kg/h and (50±0.5) kg/h the mass flow rate) were treated with this system. The results show that the temperature of tap water and soybean mitk at the center point of each compartment's axis is linear with the length of the ohmic heating compartment. The temperatures of tap water and soybean milk rise evenly within each ohmic heating compartment from the bottom to the top. Inside the sixth ohmic heating compartment, the temperatures of tap water and soybean milk at the center point of the central plane are all higher than those near the pipe wall. The temperatures of tap water and soybean milk in different planes along the axis increase obviously and evenly.
